EDIT, situated in the Hackney neighborhood of London, is a plant based restaurant with a holistic concept that emphasizes making every decision an environmentally sound one. With its innovative stance on sustainability, EDIT disrupts the traditional notions of the restaurant industry. From their carefully curated produce to their choice of vendors and even the interior design, every element demonstrates a respect for the environment and the creation of a space that embodies circular economy and zero food waste principles.

Elly Ward, the founder of EDIT, discovered her passion for positive change through her dual roles as both an educator and practitioner in architecture. This combined with her exposure towards inequalities within the global food system inspired her to make a meaningful impact on her community and environment as well as adopting a plant based diet herself.

Head chef Ania Bolechowska and her team employ inventive methods to showcase locally sourced and seasonal plant-based produce, adopting a 'root to fruit' approach to minimize waste. Their menu exemplifies a deep respect for local farmers and foragers, stating the origin of each ingredient, down to the farm and location. With a focus on fermentation and preservation, she transforms seasonal ingredients into year-round available delicacies, to avoid monotony on the menu. In essence, "Edit" embodies a new era of dining—one where sustainability, flavor, and innovation converge to redefine the culinary landscape.
